Ultra Premium™ is the highest designation and quality grade that is awarded to Olive Oil, and surpasses all current standards for Extra Virgin. UP certified Extra Virgin Olive Oils are all you will find at The Olive Oil Emporium. It is the oil that comes from the first "pressing" of the olive solely by mechanical or other physical means, is extracted without using heat (a cold press) or chemicals, crushed within 3 to 4 hours from harvest, and with a superior chemistry. The less the Olive Oil is handled, and the closer it is to its natural state, the better the oil. If the Olive Oil meets all the criteria, it can be designated as "UP extra virgin". Additionally, all our Olive Oils are 100% true to the varietals used. This means that an Olive Oil we list as being an Arbequina, is produced from 100% Arbequina olives. The same is true for all the Olive Oils on our site with respect to the varietal(s) used. Remaining consistent with our values and belief in transparency with the oils we carry, we will also list the country of origin and harvest/crush date for each of our varietal oils. Unfortunately, most supermarket brands cannot make the same claim about their olive oils.

Not all Olive Oils are created equal.
As with any fine wine and different grape varietals, each Olive Oil and olive varietal is just as unique.

Koroneiki Extra Virgin Olive Oil

Intensity: Robust

Description: Layered with notes of apple peel and creamy green banana, this year’s harvest lives up to the signature flavor profile and reputation of  a well-made Koroneiki. This classic Greek varietal is both balanced and fresh. The Koroneiki olive grows in abundance in Greece, is very small and difficult to cultivate, but it also has one of the highest oil contents, typically 20-30% oil. The overall yield of oil per tree is much lower, but its return is an oil of exceptional quality. The common production of olive oil per tree is 10 litres, while the Koroneiki variety produces only 1-3 litres of the rich gold-green juice. This small olive, however, delivers a healthy punch and a consistently low acidity. The Koroneiki olive also has a very high level of polyphenols, the chemical substances found in plants that may reduce the risk of heart disease and cancer. The oil is high in oleic acid and very stable, which means it has a very good shelf life. It is a varietal that is also more resistant to insects and droughts than many other olive varietals. This award winning olive oil took the highest award: “Best Of Show” in the 2016 Los Angeles Olive Oil Competition.

Tasting Profile / Serving Suggestions: This year's Chilean Koroneiki is loaded with green banana flavors, the signature flavor profile of any well made Koroneiki. Our Chilean harvest of this classic Greek varietal is very complex and delightfully pungent with herbaceous and grassy notes and hints of green apple. Very high fruitiness score! It is a great example of a well made Koroneiki that is fabulous as a finishing oil with any salad, and all vegetable dishes. Enjoy over bean salads, grilled vegetable dishes and meats, and roasts.
