Description: The Cornicabra is a popular Spanish varietal and its name comes from the characteristic shape of a horn on its fruit. Its name refers to the curved shape of the fruit, which is reminiscent of a goat horn. It is also known by other names including Cornezuelo, Cabrill, Cornal, and Corval. The Cornicabra olive tree adapts to the specific conditions of each growing area, and is therefore very resistant to frost or drought, and adapts very well to poor soils.
This season’s Cornicabra is sourced from Portugal. The oil from this variety is typically highly aromatic, with notes of fruity olive and other fruits including apple. Herbal olive leaf notes can be appreciated on the palate, with a slightly bitter taste. It has a remarkable balance between sweet, bitter greens and spicy medium intensity. The oil from this variety is desirable due to its high yield and stability. It is very stable due to its high content of monounsaturated fatty acids and high polyphenol content. For this reason, it is also popular for sautéing and stir-frying.
Tasting Profile / Serving Suggestions: This complex Cornicabra displays many layers of flavour and lingering fragrant notes as well as a distinct front, middle and finish. An uncommon variety, this oil displays a green apple front, a creamy green almond center and sophisticated floral finish. It has a lingering pepper finish. Bold, and full-flavoured, this olive oil is great over grilled meats, pasta, over salads, and as a full-flavoured dipping oil with your favourite bread.
