Origin/Cuisine: The entire Middle East, including Egypt.

Description: A popular condiment with ancient roots - widely enjoyed throughout the Middle East and north Africa, and beyond. The blend varies from region to region, and also between households, but its popularity and versatility make it a well-loved staple. Often mixed with olive oil and spread on flatbread or as a dip for pita and Jerusalem Bagels. Also serves as a seasoning to sprinkle on dips like hummus and labneh, or vegetables, and salads, or in meatballs or kebabs.

In Palestine, there is a belief that za'atar makes the mind alert, and children are sometimes encouraged to eat za'atar at breakfast before school. In the 12th century physicians prescribed za'atar for its health advancing properties. Since ancient times, people in the Mediterranean region of the Middle East have thought za'atar could be used to reduce and eliminate internal parasites. Za'atar is rich in antioxidants.

Profile: Tangy, Herbal, Nutty. 

Serving Suggestions:  It is commonly eaten with pita or flatbread which is dipped in olive oil and then za'atar.  It is used as a seasoning for meats and vegetables or sprinkled onto hummus. It is also eaten with labneh (yogourt drained to make a tangy, creamy cheese), and bread and olive oil for breakfast, most commonly in Jordan, Palestine, Israel, Syria, and Lebanon, as well as other places in the Arab world. The Lebanese speciality shanklish, dry-cured balls of labneh, can be rolled in za'atar to form its outer coating.
