Nocellara del Belice - In Olive Oil, DOP

Description: The original Nocellara del Belice DOP from Sicily in Olive Oil. This version is cured differently from the classic bright green Castelvetrano. It is the same olive variety, but it is cured differently, - and lightly crushed/cracked at the beginning of the curing process to allow for even curing and flavouring. Once the curing process is complete they are jarred in lightly seasoned extra virgin olive oil. The resulting colour is also different from the initial bright green - now more like a yellow/brown-green. A great olive accompaniment to any antipasto offering, or to simply enjoy on their own. The extra virgin olive oil they are stored in can be used for flavouring or marinating other dishes, poultry, roasted potatoes, or other olives! In Italy these are referred to as "Olive Schiacciate" - cracked olives! These olives contain pits.
Tasting Profile: Unlike the traditionally prepared Nocellara/Castelvetrano olive, this olive oil-marinated version is a little more firm and slightly bitter. A great olive accompaniment to any antipasto offering, or to simply enjoy on their own. These olives contain pits.
