Description: An exceptional flavour profile and a marriage of earthy, savoury, and sweet. Great for bread dipping, incorporating into dressings, rubbing onto chicken or fish for roasting. Black garlic is made when heads of garlic, or separated cloves, are aged in an environment of controlled humidity and temperatures for 15 to 90 days (typically 85% humidity at 70 °C for 40 days). No additives or preservatives are used and there is no burning of any kind. The enzymes that give fresh garlic its sharpness break down. The cloves turn black and develop a sticky date-like texture. Black garlic has been around for many, many years. A culinary staple and treasure for chefs and epicureans. It is savoury yet sweet, and beautifuly balanced with the ginger.
Tasting Profile / Serving Suggestions: A smooth olive oil that only enhances the freshness and intensity of rich garlic. Very noticeable without being overwhelming. Works well over any dish where a touch (or more) of garlic and ginger is desired. Simply drizzle over your meal once plated, or over your pot/pan just before pulling away from the heat to get an aromatic meal and thorough garlic flavouring. Try drizzling over roasted potatoes, stir-fries, or for marinating your grilling meats.
