Description: A rare example of a Spanish varietal that has been around since 1991. This newly discovered cultivar is a natural cross between the iconic Spanish Picual and Arbequina varieties. Our first harvest and example of this rare varietal this year is produced in Portugal and impresses the palate with its delicate flavours. Additional Notes: Our partner producer (SAOV) in Portugal is using a high vacuum during malaxation to remove all of the oxygen in this processing stage where the oil spends the most time and is most prone to oxidation. This cutting edge and very technical method preserves the phenolic content, the overall chemistry plus the flavour characteristics while reducing other oxidation markers.
Tasting Profile / Serving Suggestions: The Chiquitita displays notes of tropical fruit and banana with a confectionary center. A high fruitiness score. Ideal for baking! A very versatile olive oil that is sure to please the palate!
