Description: Olive Drops – Black Spherical Olives. These are no ordinary olives. A creation of the renowned chef Albert Adria of the famous Michelin starred restaurant Tickets in Barcelona, and earlier as head pastry chef at elBulli.  Black olives have been puréed & reformed using the juice of Spanish Gordal olives and other natural additives. The liquid inside explodes in the mouth upon tasting with a delicious, refreshing flavour. The spherical olive is one of the most famous dishes from elBulli. At your table, you and your guests will be astonished by the way they explode in the mouth, with delicious juice of Gordal olives. It is a technical process that requires a lot of knowledge, time and patience. This is molecular gastronomy at its finest.

A jar of Caviaroli Drops by Albert Adrià contains 12 spherical olives according to the original recipe. They weigh 5g each and have a diameter of 20 mm.

Store at room temperature in a dry place. Refrigerate after opening & use within 1 week. Not suitable for freezing.

At your table, you and your guests will be astonished by the way they explode in the mouth, with delicious juice of Gordal olives. The Black Olive Drops have a deep black colour and a texture that is more dense than the green Olive Drops. It is a technical process that requires a lot of knowledge, time and patience. This is molecular gastronomy at its finest. Serve on its own as an appetizer, in martinis, or between courses. It can be served alone in a catering spoon, a Japanese soup spoon, or in a normal dessert spoon resting on the edge of the plate or tray where it is presented.

Ingredients: extra virgin olive oil (98%), water, gelling: E401, stabilizing: E509, acidifying: E330, preservative: E202. It may contain traces of sulphites, nuts, and/or fish.
