Description: The Coratina varietal is one of the most important Italian olive varieties and is now widely cultivated in many olive growing regions around the world, and in both North and South hemisphere producing regions.

Tasting Profile / Serving Suggestions: This outstanding example of the classic Italian Coratina variety has been harvested from Chile! This year’s harvest of this bold varietal displays prominent notes of dandelion greens and wild grass. You will also experience notes of green almond and unripe banana in this olive oil that is loaded with healthy polyphenols.There is a delayed pepper note that is wonderfully bitter and pungent - typical of a high phenol olive oil. This highly awarded Coratina starts off with a deceptively sweet and creamy front. A slightly bitter center gives way to a jolt of pungency on the finish. Bold and Tuscan in style, this well-made Coratina is a durable and healthy choice that is ideal for cooking and consuming raw.
