Olive oil can easily replace butter or margarine in most recipes. The quantities in the chart above are most useful for conversions in recipes used in baking for pastries and cakes, where quantities must be more exact. It is also important to note that in baking you should always try to use milder, fresher oils (as opposed to robust, bitter oils) or even some late harvest olive oils which tend to have a rounder, "sweeter" flavour and don't have a very distinct "olive" or bitter flavour.
