Confit of Sundried Tomatoes with Balsamic - Specialty of Provence
(Delices du Luberon, France)
Region: Luberon - Provence, France
Description: Confits are a renowned specialty of southern France. The word confit is used to describe any type of food that is cooked slowly over a long period of time in oil (or sometimes in a sugar syrup) as a method of preservation. This traditional Confit of Sundried Tomatoes is enhanced with a touch of Balsamic Vinegar to add more depth and complexity. Soft on the palate and slightly acidic, it will delight the senses. An ideal accompaniment to grilled meats & kebabs (especially lamb), roasted meats and grilled fish. Great with braised vegetables like endives, zucchini, eggplants, and also pairs well with pasta, rice, or pie bases. Absolutely divine with foie gras!
