Description: Aged for over 30 years, this product is made exclusively of cooked grape must aged for many years in wooden barrels, where it concentrates naturally and gets thicker and more aromatic from year to year. Every year it is transferred into a different wooden barrel to acquire the various aromas of oak, cherry, chestnut, ash, mulberry, and juniper woods. The Traditional Balsamic Vinegar of Modena DOP - Denominazione di Origine Protetta” in Italian, or PDO “Protected Designation of Origin", can only be bottled in the specially shaped 100ml glass jar designed by Giugiaro which is numbered and sealed with the DOP mark by the Consortium (Consorzio Tutela Aceto Balsamico Tradizionale di Modena - Traditional Balsamic Vinegar of Modena Protection Consortium). It is a highly regulated process to assure the end user of the product's authenticity.
The DOP Traditional Balsamic Vinegar of Modena Extravecchio 30 contains NO preservatives, NO colours, NO caramel, NO thickening agents, and NO added sugars. The only ingredients are cooked grape must. Only a couple of drops of this fine balsamic will leave you and your guests with lasting impressions.
Tasting Profile / Serving Suggestions: The flavour of this balsamic is rich and complex. On the palate is is extra dense and well-balanced. Generally reserved for your finest dishes and occasions, its thick texture makes this balsamic ideal with ripe cheeses, over grilled meats, and over fresh strawberries and poached pears. This rich, dark balsamic can be used as a dessert topping, a salad dressing base, or as an everyday condiment! A balsamic to be paired with any of our olive oils, and simply divine on its own.
