Description: A first-time offering at The Olive Oil Emporium: a limited batch of the rare Lentrisca varietal. Native to Portugal, this varietal is rarely seen outside of its production area. It is usually blended with other varieties, but here we present the Lentrisca in its purest form. This year’s harvest produced a total phenol content of 709ppm, an antioxidant powerhouse which includes 189ppm of healthful Oleocanthal – resulting in a powerful pepperiness.
Additional Notes: Our partner producer (SAOV) in Portugal is using a high vacuum during malaxation to remove all of the oxygen in this processing stage where the oil spends the most time and is most prone to oxidation. This cutting edge and very technical method preserves the phenolic content, the overall chemistry plus the flavor characteristics while reducing other oxidation markers.
Tasting Profile / Serving Suggestions: This year’s harvest presents the palate with tropical fruit characteristics, a sweet berry and cream center and fiery Szechuan peppercorn finish with a lingering spicy mouth feel. A great olive oil that works well with savoury dishes that are well-seasoned, with roasted meats and vegetables, with grilled meats, and big protein-enriched salads.
