Description: The well-known Kalamata Olive of Greece is presented here in an extremely rare pressing of fresh, high-phenolic olive oil. This early harvest Kalamata extra virgin olive oil contains a staggering high total phenol content of 1093.14 ppm! Scoring very high in fruitiness and with a desirable pungency, it is delightfully astringent and spicy with notes of green tea, savoury herb, creamy green almond and artichoke. . It displays excellent chemical composition which equates to a healthier, more durable EVOO! The combination of picking the fruit at an extremely low green maturity index (early harvest) and minimal processing resulted in the high phenol content and extraordinarily high and healthful Oleocanthal properties with a record-breaking 718.87 ppm  (a staggering 66% of the total phenolic count),** -  and one of the highest we have ever seen! Extremely limited quantity - Ultra High Phenolic Olive Oil.  **Last year this antioxidant powerhouse placed in the World’s Healthiest Olive Oil Competition and took 1st place in the Oleocanthal category with 396.8ppm.  

Additional Comments: The levels of oleocanthal and oleacein are higher than the average values (135 and 105 mg/Kg respectively) of the samples included in the international study performed at the University of California, Davis. The daily consumption of 20 g of the analyzed olive oil provides 38,39mg of hydroxytyrosol, tyrosol or their derivatives.  Olive oils that contain >5 mg per 20 gr belong to the category of oils that protect the blood lipids from oxidative stress according to the Regulation 432/2012 of the European Union. 
It should be noted  that oleocanthal and oleacein present important biological activity and they have been related with anti-inflammatory, antioxidant, cardioprotective and  neuroprotective activity.

Tasting Profile / Serving Suggestions: A full flavoured olive oil scoring very high in fruitiness & with a desirable pungency, it conveys intense pepper on the finish and is highly delightfully astringent and spicy with notes of green tea, savoury herb, creamy green almond and artichoke. An exceptional condiment / nutraceutical for those who seek the best olive oils, with the best chemistry, and are serious in their approach with phenolic content for their health.
