Description: The Cobrancosa is the most coveted of all Portuguese varietals. Unique to Portugal, this is a very rich, floral and complex single varietal extra virgin olive oil! It is an early harvest olive oil, and one of the most popular extra virgin olive oils in our shop!
Additional Notes: Our partner producer (SAOV) in Portugal is using a high vacuum during malaxation to remove all of the oxygen in this processing stage where the oil spends the most time and is most prone to oxidation. This cutting edge and very technical method preserves the phenolic content, the overall chemistry plus the flavor characteristics while reducing other oxidation markers.
Tasting Profile / Serving Suggestions: Unique, rich, floral and complex! This harvest displays savoury notes of tomato leaf, bitter radicchio, and pungent arugula with a lingering spicy finish. On the palate it is quite creamy, and is layered with moderate bitterness and a pleasant, lingering pepper finish. A versatile olive oil that is always one of our most popular Northern Hemisphere extra virgin olive oils! A big, full-flavoured olive oil that is great over grilled meats, pasta, over salads, and as a full-flavoured dipping oil with your favourite bread.
